After hurricane katrina, we lived in a fema trailer behind our church building for several months. There were 3 different families that lived there as well as lots of workers that would come and go. It was so much easier for us to cook in the church building and all eat together as a family vs in the small tiny kitchen of a quaint fema trailer. One of neighbors were the Tates. John and Charlene have also been close family friends of ours and it is amazing how much closer you get to people when you are living under similar circumstances. Mrs. Tater would stay up ALL hours of the night making pies and all kinds of goodies and loved to teach anyone how to cook! If you couldn't sleep, and went to the kitchen at 3 am-she was there....with an apple pie waiting. This is such a delicious, easy soup that she taught me to make.
-2 cans cream of potatoe
-1 can sweet creamed corn
-1 can cheddar cheese soup
-1 pint half & half
-1 small block velveeta(chopped into small pieces)
-1 lb shrimp( i am not somewhere i can get fresh shrimp, so i use precooked frozen shrimp)
-1 capful crab boil
-3 tbsp butter
1. Add cream of potatoe, creamed corn, cheddar cheese soup, half & half, crab boil & velveeta into a crock pot on low. Salt & pepper to taste.
2. Thaw frozen shrimp out, and sautee on low briefly in butter to warm shrimp up. Add to crock pot.
3. Leave on low until cheese is melted through. Stirring occasionally. (see..EASY!)
*Note: If in hurry, you can cook this on stove top, but I prefer to throw everything in the crock pot in the morning and cook all day until dinner.
